THE VINEYARD: Made with grapes from multiple vineyards located in the villages of the middle Vinalopo, between the mountains of Salinas, Umbria and Sima.AGE OF THE VINEYARD: The Monastrell vineyards planted in goblet between 1935 and 1970 while the Grenache vineyard was planted in 1980 - 1985.YIELDS: 1.5 kg per plant.VITICULTURE: Where a traditional dry viticulture is carried out resulting in a yield of 1.5 kg per plant.ALTITUDE: 650 - 750 m.SOILS: Shallow soils, composed mainly of limestone, which is the parent rock. The largest marble quarry in Europe is located near our vineyards, a testimony to the calcareous quality of the soils. Marble is the product of chalk, or calcium carbonate, which has been compressed over a long period of time.CLIMATE: Continental, with some Mediterranean influence. A unique microclimate that is the result of the convergence of the three mountain ranges mentioned above, combined with high altitudes, which are unique to this area of Alicante.HARVEST: The grape harvest is adapted to the optimum moment of ripening of the grapes. The Alicante Bouschet harvest begins in mid-September, followed by the Monastrell harvest at the beginning of October.WINEMAKING: The grapes are meticulously sorted in the winery. Fermentation is carried out in open stainless steel tanks using only indigenous yeasts. Later the wine is transferred to new French oak barrels, where malolactic fermentation takes place. Each parcel is harvested, fermented and aged separately for approximately 18 months.
