Carnaroli is a rice from northern Italy, from the Piedmont region, grown in rice fields in the Po river basin, at the foot of the Alps and surrounded by mountains. It is rich in amylose, which contributes to the firmness of the grain. It is a favorite of international chefs because it resists cooking well and does not overcook.
Large and colorful grain, it gains when it matures or ages as its absorption capacity increases and its flavor is reinforced.
